Let’s Do Lunch: Curry Chicken and Potatoes
We will be making curry chicken served with store bought pita bread. To cook along with us, please have the following ingredients prepped:
Ingredients: (2-3 Servings)
2 tablespoons of vegetable oil or light olive oil
1 medium onion, diced
2 large cloves of garlic smashed and roughly chopped
½ Habanero pepper seeded (optional)
2 tablespoons of curry powder (preferably Javin Brand, Sharwoods or McCormick’s Curry Powder )
1 tablespoon taco seasoning
2-3 medium gold potatoes,cut into 1-inch dice ( (yielding 2 cups)
1 pound of boneless skinless chicken breast, cut into 1-inch cubes
1/4 teaspoon sea salt to season the chicken breast before cooking
1 teaspoon garlic salt
2 cups of low sodium chicken stock
1 package of pita bread (feel free to substitute with naan or any readily available bread)
